Bacon-"Knödel" (Dumplings)

Ingredients for 4 persons

  • 250 g of dry white bread
  • 40 g butter
  • 40 g bacon
  • ¼ l milk
  • 2 eggs
  • 1 small onion
  • chopped parsley
  • flour as required
  • salt

Dice the bread finely and lightly fry the onion in butter and add to the bread. Mix milk with the eggs, add parsley and salt and pour over the bread. Mix well and leave to rest for about half an hour. Mix in the flour well, knead all the ingredients into a dough and with wet hands form round dumplings with a smooth surface and simmer approx. 20 minutes in boiling water. 

Barley soup

5 portions

  • 50 ml Oil
  • 50 g onion, chopped
  • 50 g carrot, cubed
  • 40 g celery, cubed
  • 125 g barley
  • 150 g Selchfleisch
  • 1.5 l bouillon or water
  • laurel leaf
  • salt, chives

Steam the onion in oil, add the carrots and the celery to it. Add the barley to the vegetable, wash before. Add the smoked meat and the bouillon, and leav to cook for approx. 45 minutes. Take out the cooked meat, leave to cool, cut into cubes and put into the soup. Cover the soup with pepper and chives.

Herrengröstl

Ingredients for 6 persons

  • 160 g butter
  • 600 g lean veal or beef
  • 1 ½ kg potatoes
  • 1 medium size onion
  • 2 bay leaves
  • marjoram, finely chopped, salt, pepper
  • a little gravy
  • fresh parsley

Melt approx. half the butter in a heavy pan and lightly fry the onion until golden. Add the meat, turn up the heat and fry quickly. In a separate pan, fry the chopped potatoes in the remaining butter until golden. Add finely chopped bay leaves, season with salt and pepper, toss or stir well, moisten with a little gravy and serve immediately on pre-heated plates. Garnish with a sprinkling of chopped parsley. Salad makes an excellent side dish. 

Apple fritters

Ingredients for 6 persons

  • ½ l milk
  • 180 g flour
  • 2 eggs
  • 1 tbs. sugar
  • 4 large apples
  • a shot of rum
  • a pinch of salt

Mix well the milk with the flour, then whisk in the eggs, sugar, salt and rum until the mixture drips lightly from a spoon. Leave the batter rest for 15 minutes or so, peel and core the apples and slice them into rings, dip in batter and fry in hot oil until golden. Sprinkle with icing sugar and serve hot. Serve with vanilla sauce. 

Vanillekipferl

about 60 pieces

  • 300 g flour
  • 125 g sugar
  • 1 packet vanilla sugar
  • some vanilla essence
  • 3 egg yolks
  • 125 g grated almonds
  • 250 g butter
  • 2 packet vanilla sugar for turning the Kipferl

Knead all ingredients quickly to a smooth dough and let it rest one hour. Form the dough into a thin roll, from this cut pieces and form them to crescents. Put them on a well oiled baking tray. Bake them in the oven at 170 - 190°C for 12 - 14 minutes. After this turn them immediately in the vanilla sugar. 

Bread cake

Ingredients for 4 persons

  • 100 g rhy or whole weat bread
  • 2 cups of wine
  • 2 tbsp rum
  • 100 g almonds
  • 50 g candied oranges
  • ½ tsp clove powder
  • 1 tsp cinnaomon powder
  • 100 g milk chocolate
  • 150 g sugar
  • 1 package of vanilla sugar
  • 4 eggs
  • butter for greasing the pan
  • bread crumbs for pan

Grate the bread and let soak in wine-rum mix for 30 minutes. Add grated almons, chopped oranges, clove and cinnamon powder and then mix with melted chocolate, sugar, vanilla sugar and egg yolks until dough is smooth. Then add dough and bake in pre-heated oven for 45 minutes at 200° Celsius. Let cool and fill with marmalade.
